Pigeon Peas have been cultivated for 3500 years & may have come to the West Indies with the slave Indian workers around the mid 1800′s You can use the green peas like fresh peas, & the dried peas like any other dried peas, beans or lentils. (In India Dhal is made from pigeon peas.) The peas can also be sprouted & they can be ground into flour.
